Max Herzberg:

I am an "old hand" in the Biotechnology field and quite new to the world of wine making . We planted our Kerem a few years ago and took care of a 15 years vineyard until our new one will give its fruits. Both Vineyard are planted North East to South West with a minimal use of pesticides. We rather use Organic Agriculture products such as pheromones etc. Altogether we have 12 dounam with Cabernet Sauvignon, Merlot, Malbec and a small patch of Petite Syrah. The Malbec developed in a very impressive way and this year (2009) we will make a pure Malbec wine. In 2008 we used it to blend with a wine which will be ready for tasting only in January and reminds of the Cahors wines..


Winery

Both vineyard are east of Rehovot in the first hills which will become the Judean hights. This is why I call the wine "Coteaux de Sitrya" i.e hills of Sitrya which is my Moshav. The ground in Sitrya is of pure sand for the first 30-50 cm beneath which the ground become much richer in clay and minerals. This gives a nice situation for the root system as the water flows on the sand but are then retained by the clay-sand mixture.


Wine:

We hope you have already tasted our 2008 Merlot - it is purely our own Vineyard now 6 years old. The 2007 is a mixture of the two vineyards. The "Reserve" is a mixture of 1/2 Merlot and 1/2 Cabernet Sauvignon. Both are aged in Oak Barrels for 9 month and we mix French and American Oak to get the taste we like.
